The Synergy of Wine and Olive Oil

The family boutique winery Ipša is located in the hamlet of Ipši, beneath Oprtalj with a view of Motovun. From Ipši, there is a view of the Motovun Forest, one of the most significant habitats of white truffles in the world. Truffle hunting was precisely the first hobby of young Klaudio Ipša, then he tried his hand in hospitality, but he discovered his true love in olive growing.

At the beginning of this century, spouses Klaudio and Irena Ipša devoted themselves to olive cultivation and quickly became one of the most significant producers of olive oil in the region. Today, they have a modern olive mill and 4000 olive trees, winning numerous awards for their olive oils. Their son Ivan helped his parents and showed great love for viticulture, so in 2010, they added viticulture to their olive growing.

Today, they are present in the wine scene with six wine labels, and their vineyards are located in the positions of Ipši, Oprtalj, and Santa Elena, which is one of the highest vineyards in Istria. They cultivate: Istrian Malvasia, Pinot Gris, Refosco, and Teran, producing exclusively macerated and aged wines that can be tasted alongside olive oils and other delicacies in a modernly equipped tasting room.
